Yo, I hit up this spot tonight while in independence and it was pure fire!
At first it might seem sketchy getting sushi off of a food truck but I assure you it’s not!
I got a Missouri roll and a Maui roll both were absolutely delicious!
Service was fast!
Quality was high
Food was tasty!
I will be in town for 2 days and this will be dinner each night period!
This place is always great the food is perfect and one meal can feed all 3 family members keep it up saiko!!-
The "Cook" family!

The food at this place is spectacular & the employees are also fantastic! I was in town getting my son situated in his college dorm & I needed some really good food. I'm not a burger or taco bell type of person so after asking around about various choices someone recommended this place. I went up a little before dinner time just to check out the menu in case my son & I decided to have dinner from there after his football practice. I talked a bit with Miguel and told him that I would be back around 7 or 715. He asked what I might want so I told him. My son & I returned around 715 & it was very darn impressive that they had my order ready! The portions were huge & we just couldn't believe the price compared to the food prices here in Las Vegas. My shrimp hibachi was really good and my son also enjoyed his steak. Considering the bad experience that I had at one of the hotels in Independence this small food truck made up for it & gave me hope that there are people who understand & believe in offering good customer service. My son said while he's there for school he'll definitely be visiting this truck again. Thank you Saiko Sushi & Hibachi & I wish you all the continued success you desire! Sincerely, Kisha

I can say that if you gave this a low rating, your to damn picky and don't know what good food is. I've eaten at a high end restaurant in Denver Colorado, serving some similar sushi rools but the fried rools are to die for here, and unique, I can say it was well worth the price and I can honestly say from out of a food truck, it was way damn better then the restaurant I went to. The duck tales rool and Pokemon rool is ????. The crab Rangoons ????, and they serve bulgogi which I looking forward to trying soon. This is probably the best thing that has hit independence Kansas after leaving for 6 years. For sure will be returning every payday just for a bite to eat. New favorite spot to some amazing cuisine.

Got home and started digging into my food. It smelt delicious then found a fly in my food. I know this happens but I work hard for my money and wasted $12

We went here for lunch after an overnight hike at the Elk River Trail. A local recommended it. We were starving and it was fast, hot and so good! The service was excellent and friendly. One of us had sushi and the other had a rice dish, both were delicious.

Five stars for the Lava Roll(deep fried) Love the seaweed salad recipe(my favorite!) Wife said Hollywood Roll was delicious and gives it Five stars but wow....It was hard to even chew the chicken in the Hibachi chicken dish. I think I broke a tooth. My wife's Hibachi Ckn dish had pieces of steak all through it. I enjoyed the Lava Roll so much I went back the next day for another. While I was in line, I was discussing the place with a guy that was in line. He agreed with me about avoiding the chicken Hibachi BUT he says the Shrimp Hibachi is AWESOME. I intend on trying it next visit to Independence.

Omg so good. You've got to eat here. I got the Hibachi chicken and a California roll. There was enough food for two people at least. And the yum yum sauce was delicious to put on top. The only thing that would make this better would have been them having a real restaurant and not picnic tables out front of food truck.

Went here based on suggestion of coworker. Ordered the Chicken Hibachi and egg rolls. There was indeed A LOT of food. It is probably enough to feed 3 people.
While the size is very large, the sauce was quite salty and the rice seems overcooked. Still, not a bad meal (or 3).
